Birdies Townhouse
Review
Birdies Townhouse is a superb find in the heart of Mitchelstown, the gateway to County Cork, and one of the smartest stays I’ve endorsed for this book. Family-owned and beautifully presented, it’s clear host Mark Hyland has spared no expense in creating a modern, sleek townhouse where comfort and style go hand in hand. Bedrooms feel fresh, contemporary and thoughtfully finished, with the small details that make a short break effortless. Location-wise, you’re perfectly placed for the Rock of Cashel, Mitchelstown Caves, Galtee walks and plenty of nearby gems, while still enjoying great value that won’t break the bank. After a day exploring, it’s wonderfully restful. Above all, Mark is a natural host, he goes above and beyond and you’ll leave already planning your return.

Lazy Dog Shooting Grounds
Tucked away in the heart of Co. Limerick, the Lazy Dog Shooting Ground is a hidden gem, framed by breath-taking scenery and quiet woodland. I don’t feature many shooting centres in my books, mainly because standards can vary wildly, but this one truly sets the bar.

Thatch & Thyme
Set right on the Cork–Limerick border, Thatch & Thyme is the kind of restaurant that feels like a brilliant local secret you’re delighted to discover. Privately owned for more than a decade, Joanne McEldowney has created an award-winning dining room that’s just as adored by locals as it is by the judges.

Molly’s Restaurant & Takeaway
Molly’s Restaurant & Takeaway in Kilfinnane has taken an exciting new direction, and it’s a change that truly works. Having been featured in my last edition, I knew the new owners would have big boots to fill, but Samantha and her husband have stepped confidently into the role.
