Review
Wild Thyme Restaurant is, quite frankly, one of the standout dining experiences in Co. Monaghan. Having met owner-chef Karl Breen, it quickly became clear why so many people urged me to endorse this restaurant. Open only since 2022, it’s astonishing how quickly this award winning restaurant has established itself, but then Karl’s pedigree shines through every plate, honed over years working in various countries such as Dubai before returning home. His partner Sinead is equally integral to the experience, bringing warmth, polish and a genuine sense of hospitality to the dining room. Local producers and provenance are the heartbeat of the menu, with each dish telling a story of Monaghan and beyond. This is refined, confident cooking in a restaurant that already feels truly special.
