Just a short drive from the historic city of Limerick, The Mustard Seed is the kind of place that wins you over the moment you arrive. Owned and very much run by hotelier John Edward, this award-winning country house earns its third appearance in my Top 100 Attractions in Ireland book with ease. I recently stayed and dined here, and it’s all about the experience! Warm welcomes, thoughtful touches, and cooking that lets great Irish produce speak for itself. Under John’s steady custodianship, it has featured many times in Ireland’s Blue Book, no small feat. Bedrooms are cosy and traditional, with the sort of quiet comfort that makes mornings slow and contented. It’s a superb base for exploring Limerick and surrounding counties, all within easy reach. The team is attentive and genuinely friendly, and the kitchen is on song from starters to dessert. Simply put, you’re in good hands here.
