Since opening in 2013, Sage Restaurant has been a byword for quiet excellence. Owners Eva Ivanova and chef-partner Shteryo Yurokov, originally from Bulgaria, hit the ground running: Georgina Campbell’s guide in year one, McKenna’s the next, and a steady stream of awards ever since. What keeps guests returning is simple: flavour-first cooking and switched-on service. Shteryo’s obsession with local produce sings in every plate, seasonal, honest, beautifully balanced. Eva’s front-of-house warmth ties it all together, creating the kind of hospitality that feels both polished and personal. Endorsed in two previous editions of my Top 100 Attractions on the Island of Ireland, it’s a pleasure to include Sage in this third edition. This is a restaurant rooted in place, powered by passion, and crafted for repeat visits.
